      Sure, there are some smallholdings for sale in the neighboorhood
      but I don't know if they can be compared to the ones in New Zealand though !

      I would love to have you as my neighbor :)

  3. Love your blog and seeing your beautiful surroundings. Your collecting of birch sap is intriguing. What do you use the sap for?

    1. Thank you Pallas,
      I collect the birch sap to drink it, it taste slightly sweet.
      I do it every year around the middle two weeks of March and drink it fresh.
      There are a lot of health claims associated with Birch sap,
      it is known as an excellent spring tonic.
      This year I will also make a fermented beverage with birch sap and honey: a mead.
